Estima-se que, no futuro, um dos maiores desafios será se a humanidade conseguirá alimentar a crescente população mundial. A ingestão de insetos na alimentação humana recebe cada vez mais atenção, por quê? Isso se deve, por um lado, ao fato de que o valor nutricional dos insetos poderia ajudar a crescente população mundial como fonte alternativa de proteína, por outro lado, a produção de insetos para consumo humano tem um impacto ambiental menor do que o produção de carne de animais de fazenda convencionais. No entanto, a aceitação da entomofagia na sociedade ocidental é um dos principais obstáculos. O objetivo deste estudo é, portanto, examinar a aceitação do consumidor de entomofagia na população de língua espanhola.
